Ingredients
  

  • 1/2 Cup Chopped Carrots
  • 1 Large Sweet Potato Chopped into Bite-Sized Pieces
  • 1/2 Medium Yellow Onion
  • 4 Ounces Baby Bella Mushrooms Sliced
  • 2 Cups Brussels Sprouts
  • 1 Pound Boneless Skinless Chicken Thighs
  • 2 Tbs Avocado Oil
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Sauce

  • 3 Tbs Dijon Mustard
  • 2 Tbs Honey
  • 1.5 Tbs Soy Sauce
  • 1 Clove Garlic

Instructions
 

  • Pre-Heat Oven to 425 F
  • Line a large baking sheet or two standard baking sheets with parchment paper

Prepare Your Vegetables

  • Chop all of your vegetables into bite-sized pieces

  • Add all vegetables to a large bowl
  • Top with avocado oil, salt, and pepper and mix well

Bake

  • Place your vegetables on prepared baking sheet in a single layer

  • Bake for 15 minutes

Prepare The Sauce

  • Meanwhile, combine all ingredients to prepare your honey mustard

  • Stir vegetables and add chicken to center of baking sheet. Bake for an additional 15-20 minutes until chicken cooked through and vegetables are fork tender.
  • Drizzle honey mustard over chicken and vegetables (save extras to drizzle at the end)
