One Pan Honey Mustard Chicken and Vegetables
This delicious one pan honey mustard chicken and vegetables is a perfect family-friendly dinner. Loaded with clean eating ingredients, it's a healthy and tasty dinner everyone will love!
- 1/2 Cup Chopped Carrots
- 1 Large Sweet Potato Chopped into Bite-Sized Pieces
- 1/2 Medium Yellow Onion
- 4 Ounces Baby Bella Mushrooms Sliced
- 2 Cups Brussels Sprouts
- 1 Pound Boneless Skinless Chicken Thighs
- 2 Tbs Avocado Oil
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 3 Tbs Dijon Mustard
- 2 Tbs Honey
- 1.5 Tbs Soy Sauce
- 1 Clove Garlic
Prepare Your Vegetables
Chop all of your vegetables into bite-sized pieces
Add all vegetables to a large bowl
Top with avocado oil, salt, and pepper and mix well
Prepare The Sauce
Meanwhile, combine all ingredients to prepare your honey mustard
Stir vegetables and add chicken to center of baking sheet. Bake for an additional 15-20 minutes until chicken cooked through and vegetables are fork tender.
Drizzle honey mustard over chicken and vegetables (save extras to drizzle at the end)
Bake for an additional 5 minutes.
