It’s almost time for the Super Bowl, which means it’s time for football food!
I love all of the classic football snacks, but unfortunately, most of them are very unhealthy. Most are made from processed chips, loaded in oil, cheese, and meat.
One of my favorite football snacks is nachos which is often one of the least healthy options.
This year, I decided to create a healthy and new spin on classic nachos.
Are Sweet Potatoes Good For You?
Sweet potatoes are one of my favorite healthy food swaps since they are incredibly nutrient-dense. Sweet potatoes are naturally sweet, but with the right spices can create a savory dish as well.
Each serving of sweet potatoes is loaded with nutrients including: Vitamin A, Vitamin C, Manganese, Vitamin B6, Potassium, Copper and Niacin (Healthline).
Plus, homemade sweet potatoes aren’t fried or loaded in oil and salt like store-bought chips. This is better on your heart and your waistline!
Sweet Potato Nachos
In order to enjoy my favorite football snack in a healthier way, I created this healthy sweet potato nacho recipe. These nachos are made from homemade sweet potato chips, black beans, and all of your favorite fix-ins.
This recipe is loaded with healthy fats from black beans which will keep you full and satisfied.
You can make these nachos as is and keep them vegetarian, or top them with pulled chicken for even more protein.
After your nachos are cooked, top them with some of your favorites such as salsa, avocado, hot sauce, or Greek Yogurt as a healthy sour cream alternative.
Prepping Your Sweet Potato Nachos
For this recipe, you’ll need a mandolin to thinly slice your sweet potatoes. I love this mandolin because it’s strong, easy to use, and affordable!
Peel your sweet potatoes and then slice into 1/4-1/2 inch thick slices with your mandolin.
Lay out your sweet potatoes on a baking sheet into a single layer. Bake for approximately 20-30 minutes depending on the thickness of your sweet potatoes.
As your sweet potatoes cook, prepare your pepper, onion, beans, corn and any other desired toppings.
Once the sweet potatoes are crisp, add your desired toppings.
Bake for an additional 5 minutes until the cheese is melted and enjoy!
Sweet Potato Nachos
- sheet pan
- 2 Large Sweet Potatoes Peeled
- 1.5 Tbs Olive Oil
- 1 tsp Garlic Powder
- 1/2 tsp Cumin
- 1/2 tsp Paprika
- 1 tsp Chili Powder
- 1 Medium Yellow Onion Diced
- 1 16 Oz Can Black Beans (Rinsed and Drained)
- 1 Cup Frozen Corn
- 1 Cup Shredded Cheddar Cheese
- 1/2 Medium Bell Pepper Diced
- Toppings Avocado, Salsa, Greek Yogurt, Shredded Chicken (Optional)
- Preheat oven to 400F
- Use mandolin, thinly slice sweet potato into 1/2" slices
- Layer sweet potato in a single layer on baking sheet.
- Drizzle with olive oil and spices
- Bake for approximately 20 minutes until crispy (this will vary based on thickness of sweet potato)
- Top with diced vegetables, black beans, corn, and cheese
- Bake for an additional 5 minutes until cheese is melted.
