This healthy chicken recipe is a perfect weeknight meal with minimal clean-up! You just simply chop the veggies and bake for an easy weeknight healthy dinner.

Plus, it’s loaded with nutrients and flavor!

This is a perfect meal prep meal that you can prep ahead and roast up in a pinch.

How to Make Roasted Vegetables

One Pan Honey Mustard Chicken

Roasting vegetables is one of my favorite ways to enjoy veggies. This time of year, Brussels Sprouts, Cauliflower, and root vegetables are in excess.

Although you can roast almost any vegetables, I recommend trying root vegetables such as carrots, sweet potatoes, squash, onions, and mushrooms.

Brussels Sprouts, broccoli, cauliflower, and asparagus also work really well.

To roast vegetables, you simply chop them into bite-sized pieces, coat with avocado oil, salt, and pepper, and bake at 425F for 25-40 minutes depending on the size of your vegetables and how many you’re roasting.

What You’ll Need for One Pan Honey Mustard Chicken and Vegetables

One Pan Honey Mustard Chicken

To prepare this healthy dinner, all you need is a large sheet pan or two standard sheet pans.

One investment I highly recommend is a large baking sheet or sheet pan.

You can roast twice as much in half the time. Imagine being able to bake 2 dozen cookies at once!

I love this baking sheet because it doesn’t have harmful chemicals that will leak into your food like normal non-stick pans.

Ingredients:

  • 1/2 Cup Carrots
  • 1 Large Sweet Potato
  • 1/2 Medium Yellow Onion
  • 3 Ounces Baby Bella Mushrooms
  • 2 Cups Brussels Sprouts
  • 1 Pound Boneless Skinless Chicken Thighs
  • 2 Tbs Avocado Oil
  • Dijon Mustard
  • Honey
  • Soy Sauce
  • Garlic

How To Prepare Sheet Pan Honey Mustard Chicken

Line your sheet pan with parchment paper, preheat the oven to 425F, and then start prepping.

Chop Veggies to prepare one pan chicken

Simply chop all of your vegetables and add them to a large bowl. Add 2 tablespoons of Avocado oil and 1/4 teaspoon of salt and pepper.

As a meal prep option, I usually prepare twice the amount of vegetables that I know I’ll use. This way I can eat them in salads, goddess bowls or side dishes throughout the week.

Also, you can chop all of your veggies ahead of time, so when you’re ready to cook this dinner, you just throw them in the oven and they’re ready to go.

Stir up your vegetables and then place them on the lined baking dish.

Bake for about 15 minutes, then remove from oven and flip.

One Pan Honey Mustard Chicken

While your vegetables bake, combine all ingredients for your sauce and stir together.

Add the chicken thighs to the middle of the vegetables and bake for an additional 15-20 minutes until the chicken is cooked through and the vegetables are fork-tender.

Add your honey mustard mix and bake for an additional 5 minutes.

  • 1/2 Cup Chopped Carrots
  • 1 Large Sweet Potato Chopped into Bite-Sized Pieces

  • 2 Cups Brussels Sprouts
  • 1 Pound Boneless Skinless Chicken Thighs
  • 2 Tbs Avocado Oil

Sauce

  • 3 Tbs Dijon Mustard
  • 2 Tbs Honey
  • 1.5 Tbs Soy Sauce
  • 1 Clove Garlic

Instructions
 

  • Pre-Heat Oven to 425 F
  • Line a large baking sheet or two standard baking sheets with parchment paper

Prepare Your Vegetables

  • Chop all of your vegetables into bite-sized pieces

  • Add all vegetables to a large bowl
  • Top with avocado oil, salt, and pepper and mix well

Bake

  • Place your vegetables on prepared baking sheet in a single layer

Prepare The Sauce

  • Meanwhile, combine all ingredients to prepare your honey mustard

  • Stir vegetables and add chicken to center of baking sheet. Bake for an additional 15-20 minutes until chicken cooked through and vegetables are fork tender.
  • Drizzle honey mustard over chicken and vegetables (save extras to drizzle at the end)
  • Bake for an additional 5 minutes.
  • Enjoy! This will keep up to 4 days in the refrigerator.
